Cocoa Coffee Cake

For the Cake:
2 cups all-purpose flour
1 cup granulated sugar
½ cup unsalted butter, softened
2 large eggs
¾ cup whole milk
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 teaspoons vanilla extract
¼ cup unsweetened cocoa powder
For the Cinnamon Crumble Topping:
½ cup brown sugar
¼ cup all-purpose flour
1 teaspoon cinnamon
¼ cup unsalted butter, cold and cubed

Method

1.Preheat oven to 350°F (175°C). Grease or line an 8x8-inch pan with parchment paper.
2.In a small bowl, mix the brown sugar, flour, and cinnamon. Add cold butter and blend with a fork until crumbly. Set aside.
3.In a large bowl, cream the softened butter and sugar until fluffy. Beat in eggs one at a time, then vanilla.
4.In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Add to the wet mixture in 3 parts, alternating with milk. Stir until just combined.
5.Pour half the batter into the pan. Mix cocoa powder with 2 tbsp hot water to form a paste and swirl into the batter. Add remaining batter and swirl again.
6.Sprinkle crumble evenly on top.
7.Bake 35–40 minutes, or until a toothpick inserted in the center comes out clean. Cool 15 minutes before slicing.
