Directions:
Preheat oven to 325°F (165°C). Line a 9x13-inch baking pan with parchment paper. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and mix well. Add the eggs one at a time, beating well after each addition. Mix in the sour cream until fully combined. Pour the cream cheese mixture over the crust and spread it evenly. Bake for 40-45 minutes, or until the cheesecake is set and slightly golden around the edges. Allow to cool to room temperature, then refrigerate for at least 2 hours before cutting into bars.
Dollop the cherry pie filling over the cream cheese layer and swirl gently with a knife to create a marbled effect. Sprinkle the chopped pistachios on top.
