Cheesy Beef Enchiladas with Roasted Jalapeño Sauce
Enchiladas 🧡
One of our favorite semi-homemade meals! I don’t always have the time or energy to make food from scratch, and that’s completely okay! I always remind myself that we’re all fed and happy, and that’s all that matters! 😌
Enchiladas
- 1.5lbs ground beef
- Taco seasoning
- 1/2c onions (fine dice)
- 3 garlic cloves (minced)
- salt + pepper to taste
- 1 can black beans (rinsed. *optional)
- shredded cheese (for the filling + topping)
- 8 flour tortillas (burrito size)
- Your favorite enchilada sauce (I used @target Good + Gather roasted jalapeño)
- Preheat oven to 350°F
- brown the ground beef. Add the onions, garlic, and taco seasoning. Salt and pepper to taste.
- mix in the black beans + and hand full or 2 of cheese
- Pour about 1/2 cup of enchilada sauce into a large baking dish to cover the bottom
- Lay a tortilla on a flat surface and spoon ground beef mixture down the middle
- Roll up tortilla and place, seam side down, in the baking dish. Repeat until the pan is filled
- Top enchiladas with remaining enchilada sauce and cheese
- Bake for 15-20 minutes or until heat through and the cheese has melted
