sharing just one recipe this week because it’s the BEST.
copy-cat Erewhon kale bean salad:
1 bundle of kale (roughly chopped) 1 can of white beans (I use Great Northern beans) 1/4 cup of pumpkin seeds 3 tbsp of hemp hearts mustard dressing
mustard dressing: 3 tbsp olive oil 2-3 tbsp of stone ground mustard (I probably do 3 because I love the flavor of it so much) juice from 1 lemon salt and pepper 1 tsp of maple syrup
I mix the dressing together in the bowl, then add it to JUST my kale and massage it well. then I add in my beans (make sure to rinse and strain well with cold water to help them digest easier), and also add your hemp hearts and pumpkin seeds!
I add my avocado as I serve it so it doesn’t get brown in the fridge. I love also adding chicken or salmon to this salad as well 🫶🏼
