One of our favorite semi-homemade meals! I don’t always have the time or energy to make food from scratch, and that’s completely okay! I always remind myself that we’re all fed and happy, and that’s all that matters ☺️

Enchiladas
-1.5lbs ground beef
-Taco seasoning
-1/2c onions (fine dice)
-3 garlic cloves (minced)
-salt + pepper to taste
-1 can black beans (rinsed)
-shredded cheese (for the filling + topping)
-8 flour tortillas (burrito size)
-Your favorite enchilada sauce (I used @target Good + Gather roasted jalapeño)
-Preheat oven to 350°F
-brown the ground beef. Add the onions, garlic, and taco seasoning. Salt and pepper to taste.
-mix in the black beans + and hand full or 2 of cheese
-Pour about 1/2 cup of enchilada sauce into a large baking dish to cover the bottom
-Lay a tortilla on a flat surface and spoon ground beef mixture down the middle
-Roll up tortilla and place, seam side down, in the baking dish. Repeat until the pan is filled
-Top enchiladas with remaining enchilada sauce and cheese
-Bake for 15-20 minutes or until heat through and the cheese has melted
