Arroz con Gandules

I have a confession— I can’t make a decent pot of rice on the stove 🥲 This is where my Okinawan side meets my Puerto Rican side: I made this arroz con gandules in my trusty rice pot and it is 🤌🏼 (and my rice pot is old so don’t worry, it still has that pegao layer on the bottom 😂)

The magic to this recipe is in the amazing spices from @unchinseasoning ! I also seasoned the chicken with Un Chin! Adobo Caribe 🤤

-3 cups medium grain white rice (rinsed)
-4 slices bacon (chopped + fried. Save 1tbl of the bacon grease)
-1 tablespoon bacon grease + 1 tablespoon olive oil
-1 15oz can of gandules (drained)
-1/2 cup tomato sauce
-8 pimento stuffed green olives
-¼ cup sofrito
-1 ½ teaspoons salt
-1 teaspoon @unchinseasoning Adobo Caribe
-1 teaspoon @unchinseasoning Sazonazo
-1/2 teaspoon @unchinseasoning Dominicanita oregano
-1/4 teaspoon ground black pepper
-¼ teaspoon ground cumin
-3 ½ cups chicken stock (or fill to your rice cookers “3” line)

-In a pot over medium heat, add your bacon grease, sofrito, tomato sauce, gandules, olives and seasonings. Stir for about 1-2 minutes, until fragrant. Remove from heat. 
-In your rice cooker, add your rinsed rice and chicken stock to the “3” line . Add in everything from the stove pot, stir well. 
-Set your rice to cook on the “white rice” setting.
-After it’s done cooking, fluff and season to taste with more salt if needed.
-Done!
