Feta, Spinach & Ricotta Rolls - Golden Flaky Puff Pastry Vegetarian Snacks

Golden, flaky puff pastry filled with creamy spinach, feta and ricotta. Crispy on the outside, cheesy and soft in the middle.
Perfect for lunchboxes, picnics, party platters or easy after-school snacks.

🥬🧀 FETA, SPINACH & RICOTTA ROLLS
Serves: 18
Prep: 20 mins
Bake: 25 mins
INGREDIENTS
• 6 sheets puff pastry
• 250g frozen spinach, thawed
• 1 onion, finely chopped
• 200g feta, crumbled
• 250g ricotta
• 1 egg
• 1 tsp minced garlic
• Salt and pepper
• 1 egg, whisked (for brushing)
• Sesame seeds
👩🍳 METHOD
Preheat oven to 190°C fan-forced.
Squeeze all the liquid from the thawed spinach.
Place the spinach, onion, feta, ricotta, egg, garlic, salt and pepper into a bowl and mix well.
Cut each puff pastry sheet into 6 rectangles.
Place filling onto half the pastry rectangles.
Brush the edges with egg.
Top with another pastry rectangle and seal with a fork.
Cut two small slits in the top, brush with egg and sprinkle with sesame seeds.
Bake for 25 minutes until golden and crispy.
Serve warm.
(And try not to eat three straight off the tray.)
