Vanilla Custard Slice: Crispy puff pastry with thick custard and pink icing

VANILLA CUSTARD SLICE 💗

Just like the one from the bakery!

Crispy puff pastry layered with thick vanilla custard and topped with classic pink icing. An iconic Aussie slice that’s easier to make than you think.

YOU'LL NEED:
• 2 sheets puff pastry
• ½ cup custard powder
• 2½ cups milk
• ¼ cup caster sugar
• 2½ cups icing sugar mixture
• 4–5 tbsp water
• 1–2 drops pink food colouring (optional)

METHOD
Preheat oven to 180°C fan.

Place the puff pastry sheets onto lined baking trays. Prick all over with a fork, then cover with baking paper and place another tray on top.

Bake for 20–25 minutes until golden. Cool completely.

Trim the pastry sheets to fit a 20cm square tin. Line the tin with baking paper and place one pastry sheet in the base.

In a saucepan, whisk the custard powder with ¼ cup of the milk until smooth. Add the remaining milk and caster sugar.

Cook over medium heat, whisking constantly, until the custard thickens and boils. Continue whisking for 2 minutes until very thick.

Cool slightly, then spread the custard over the pastry base. Top with the second pastry sheet.

Mix the icing sugar, water and food colouring until you have a thick spreadable icing. Spread over the pastry.

Refrigerate for 3–4 hours (or overnight) until set.

Cut into slices and enjoy!
