Marry Me Chicken Risoni: Creamy One-Pan Pasta with Spinach and Parmesan

On the table in 30 minutes.
And everyone actually eats it. (Yes, even the kids π
)
Itβs basically Marry Me Chickenβ¦ but better.
Because pasta. And less washing up. π
π INGREDIENTS
1 tbsp olive oil
500β600g chicken breast, diced
2 tsp minced garlic
175g sun-dried tomatoes, chopped
1 tsp dried oregano
1 tsp onion powder
2 tsp sweet paprika
250g risoni (orzo)
700ml chicken stock
200ml cream
1 tsp Dijon mustard
120g baby spinach
50g parmesan cheese, grated
1 tbsp butter
Salt & pepper, to season
π©βπ³ HOW TO MAKE IT
Heat olive oil in a large pan over medium-high heat.
Add chicken and cook for about 5 minutes until lightly golden.
Turn heat down low. Add garlic, sun-dried tomatoes, oregano, onion powder and paprika. Cook 2β3 minutes.
Stir in risoni and chicken stock.
Cover and cook 8β10 minutes, stirring occasionally, until risoni is almost cooked.
Stir through cream, Dijon, spinach, parmesan and butter.
Season with salt and pepper.
Serve hot with extra parmesan (always extra parmesan π§).
π‘ MUM TIPS
Stir every now and then so the pasta doesnβt stick
Looks saucy? GOOD. The risoni soaks it up as it sits
Leftovers = amazing lunch tomorrow
Freezes well for busy nights
