CHEESY SWEET POTATO, ZUCCHINI & QUINOA FRITTERS 🧀🥒🥔

Crispy on the outside, soft and cheesy on the inside.

These healthy veggie fritters are packed with sweet potato, quinoa and zucchini… and they’re perfect for lunch, dinner or lunchboxes.

YOU'LL NEED:
• 1 medium sweet potato, peeled and chopped
• ½ cup uncooked quinoa
• 1 cup water
• 2 cups grated zucchini
• 1 tsp minced garlic
• 1 egg
• ½ cup grated parmesan cheese
• ½ cup grated cheddar cheese
• 1 cup panko breadcrumbs
• Salt and pepper
• Olive oil (for cooking)

To serve (optional):
• Sour cream
• Sweet chilli sauce
• Spring onions or kewpie mayonnaise

METHOD
Boil the sweet potato until soft. Drain and mash.

Cook the quinoa in 1 cup water according to packet instructions. Allow to cool.

Place the grated zucchini into a colander and squeeze out as much liquid as possible.

In a large bowl, mix the mashed sweet potato, cooked quinoa, zucchini, egg, garlic, cheeses, breadcrumbs, salt and pepper.

Shape the mixture into 12 fritters.

Heat olive oil in a frying pan over medium heat.

Cook the fritters for about 5 minutes each side until golden and crispy.

Serve warm with sour cream and sweet chilli sauce.
