Chocolate Marshmallow Cookies: Rich, fudgy brownie-style cookies with gooey marshmallow centres
CHOCOLATE MARSHMALLOW COOKIES š«āļø
Rich, fudgy brownie-style cookies with gooey marshmallow centres.
Theyāre soft, chocolatey and completely irresistible⦠like a brownie and cookie combined!
YOU'LL NEED:
⢠1¼ cups plain flour
⢠½ cup cocoa powder
⢠1 tsp bicarbonate of soda
⢠Pinch of salt
⢠125g butter, melted
⢠ā
cup brown sugar
⢠¼ cup caster sugar
⢠2 tsp vanilla extract
⢠1 egg
⢠1 cup mini marshmallows
METHOD
Preheat oven to 160°C fan. Line baking trays with baking paper.
In a bowl, sift the flour and cocoa powder. Stir through the bicarbonate of soda and salt.
In another bowl, whisk the melted butter, brown sugar, caster sugar and vanilla until combined.
Whisk in the egg.
Add the dry ingredients and mix until a dough forms.
Chill the dough in the fridge for 15 minutes.
Roll heaped tablespoons of dough into balls. Flatten slightly, add a few marshmallows to the centre, then wrap the dough around them.
Place onto the trays, leaving room for spreading.
Bake for 8ā10 minutes until crinkly on top.
Cool on the trays for 10 minutes before transferring to a rack.
