Caramel Mud Cake: Rich, buttery fudge cake with white chocolate and sweet caramel frosting
CARAMEL MUD CAKE 🍰
Rich, buttery and perfectly fudgy.
This easy caramel mud cake is loaded with brown sugar and white chocolate, then topped with a sweet caramel frosting. Perfect for birthdays or celebrations!
YOU'LL NEED:
• 250g butter
• 2 cups brown sugar
• 1 cup milk
• 200g white chocolate melts
• 1½ cups plain flour
• ½ cup self-raising flour
• 2 tsp vanilla extract
• 3 eggs
• Pinch salt
Caramel Frosting:
• 60g butter
• ½ cup brown sugar
• 2–3 tbsp milk
• 2 cups icing sugar mixture
METHOD
Preheat oven to 150°C fan. Grease and line a 20cm round cake tin.
Place the butter, brown sugar, milk and white chocolate into a bowl and heat in the microwave, stirring until melted and smooth. Allow to cool slightly.
Add the plain flour, self-raising flour, vanilla, eggs and salt. Mix until smooth.
Pour into the prepared tin.
Bake for about 60 minutes or until a skewer inserted into the centre comes out with a few crumbs.
Allow the cake to cool completely.
To make the frosting, melt the butter. Stir through the brown sugar and milk and heat briefly until slightly thickened.
Add the icing sugar and whisk until smooth.
Spread the frosting over the cooled cake.
