Ingredients: 6-8 slices of bread (I used sourdough) 2 eggs 4 tbsp pumpkin purée 2 tsp pumpkin pie spice 1/2 tsp cinnamon 2 tbsp nut milk 1 tsp flax meal 1 tsp vanilla extract 2 tbsp maple syrup Pinch of salt
Directions: In a bowl, combine all the ingredients to form the batter. Dip each slice of bread in the mixture, ensuring it soaks up all the flavors. Preheat a pan over medium-low heat and coat it with avocado oil. Cook the soaked bread slices for 2-3 minutes on each side, or until golden brown. Check at the 2-minute mark and cook for another minute if needed.
