Ingredients:
For the panini: - 4 slices of sourdough or ciabatta bread - 200g cherry tomatoes - 1 tbsp olive oil - Salt & pepper to taste - 100g @iamnutok Vegan Mozzarella - A handful of fresh basil leaves - 2 tbsp balsamic glaze
For the sandwich spread: - 2 tbsp vegan butter or margarine - 1 garlic clove, minced
Method:
1. Preheat your oven to 200°C (180°C fan). Toss the cherry tomatoes in olive oil, salt, and pepper. Roast for 10-15 minutes until they are soft and blistered, releasing their sweet juices.
2. While the tomatoes are roasting, prepare the sandwich spread by mixing the vegan butter with minced garlic. Spread this mixture on one side of each bread slice.
3. Heat a grill pan or a regular frying pan over medium heat. Place two slices of bread, buttered side down, in the pan. Layer each with the vegan mozzarella, roasted cherry tomatoes, and fresh basil leaves. Drizzle with balsamic glaze for that extra tangy kick.
4. Top each sandwich with the remaining bread slices, buttered side up. Press down gently with a spatula, then grill for 3-4 minutes on each side, until the bread is golden and crispy and the cheese is melty.
5. Remove from the pan and let it cool slightly before slicing in half. Serve hot, enjoying the melty, juicy goodness with every bite.
