Directions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.
Make the Crust and Crumb Topping: In a large mixing bowl, combine the flour, graham cracker crumbs, sugar, and salt. Pour in the melted butter and mix until the mixture becomes crumbly and holds together when pressed.
Form the Base Layer: Press about two-thirds of the crumb mixture firmly into the bottom of the prepared baking pan to form an even crust.
Prepare the Key Lime Filling: In a medium bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, zest (if using), and flour until smooth and creamy.
Assemble the Bars: Pour the lime filling over the crust and spread it evenly. Sprinkle the remaining crumb mixture on top.
Bake: Bake for 25–30 minutes, or until the top is lightly golden and the center is set.
Cool and Chill: Allow the bars to cool completely at room temperature. Then refrigerate for at least 2 hours (or overnight) before slicing into squares or bars.
Serve: Lift the bars out of the pan using the parchment overhang. Slice and serve chilled. Garnish with extra lime zest or a light dusting of powdered sugar if desired.
