Sheet-Pan Tikka Masala

  • Ingredients:

    1 1/2 lbs boneless, skinless chicken thighs, cut into chunks
    1/2 cup plain Greek yogurt
    2 tbsp lemon juice
    3 cloves garlic, minced
    1 tbsp grated fresh ginger
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp paprika
    1/2 tsp turmeric
    1/2 tsp garam masala
    1/2 tsp salt
    1/2 tsp black pepper
    1 red bell pepper, sliced
    1 yellow bell pepper, sliced
    1 red onion, sliced
    2 tbsp olive oil
    For Serving:

    Cooked basmati rice
    Naan
    Fresh cilantro
    Instructions:

    Marinate the Chicken: In a bowl, mix yogurt, lemon juice, garlic, ginger, and spices. Add chicken and coat well. Marinate for at least 30 minutes.
    Prepare the Sheet Pan: Preheat oven to 425°F (220°C). Spread bell peppers and onion on a sheet pan. Drizzle with olive oil and season with salt and pepper.
    Bake: Place marinated chicken on the sheet pan with the vegetables. Roast for 25-30 minutes, until chicken is cooked through and slightly charred.
