For the filling:
3/4 cup light corn syrup 1/2 cup granulated sugar 1/4 cup brown sugar, packed 3 large eggs 1/4 cup unsalted butter, melted 1 teaspoon vanilla extract 1/2 teaspoon salt 1 cup semi-sweet chocolate chips 1 1/2 cups pecan halves, chopped
For the topping:
1/2 cup sweetened shredded coconut, toasted 1/2 cup semi-sweet chocolate chips, melted (for drizzling)
Directions:
Prepare the crust:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper. In a medium bowl, combine the flour, granulated sugar, and softened butter. Mix until the mixture resembles coarse crumbs. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 12-15 minutes or until the crust is lightly golden. Remove from the oven and set aside.
Prepare the filling:
In a large bowl, whisk together the corn syrup, granulated sugar, brown sugar, eggs, melted butter, vanilla extract, and salt until smooth. Stir in the chocolate chips and chopped pecans. Pour the filling over the pre-baked crust, spreading it out evenly.
Bake the bars:
Bake in the preheated oven for 30-35 minutes, or until the filling is set and slightly puffed. Remove from the oven and allow the bars to cool completely in the pan.
Add the topping:
Once the bars are cooled, sprinkle the toasted coconut over the top. Drizzle the melted chocolate over the coconut.
Serve:
