Ingredients:
1 lb shrimp, peeled and deveined 1/2 cup breadcrumbs 1/4 cup mayonnaise 1 egg, beaten 1 tablespoon Dijon mustard 1 tablespoon lemon zest 2 tablespoons fresh lemon juice 1/4 cup green onions, chopped 2 cloves garlic, minced 1 teaspoon Old Bay seasoning Salt and pepper to taste Olive oil (for frying)
Directions:
In a food processor, pulse the shrimp until coarsely chopped. Transfer to a bowl. Add breadcrumbs, mayonnaise, egg, Dijon mustard, lemon zest, lemon juice, green onions, garlic, Old Bay seasoning, salt, and pepper. Mix until well combined. Form the mixture into patties, about 2 inches in diameter. Heat olive oil in a skillet over medium heat. Fry the shrimp cakes for about 3-4 minutes on each side, or until golden brown and crispy.
