Creamy Mexican Street Corn Pasta Salad

    2 cups corn (grilled, canned, or thawed frozen) 🌽

    1 cup cherry tomatoes, halved 🍅

    1/3 cup red onion, diced 🧅

    1/2 cup crumbled cotija or feta cheese 🧀

    1/4 cup chopped cilantro 🌿

    Creamy Dressing:

    1/2 cup mayonnaise

    1/4 cup sour cream

    1 tbsp lime juice 🍋

    1/2 tsp chili powder 🌶️

    Salt & pepper to taste 🧂

    Directions 👩‍🍳:

    Cook the Pasta: Boil pasta in salted water until al dente. Drain, rinse with cold water, and set aside.

    Mix the Dressing: In a bowl, whisk together mayo, sour cream, lime juice, chili powder, salt, and pepper.

    Combine Salad: In a large bowl, mix pasta, corn, tomatoes, red onion, cheese, and cilantro.

    Toss & Chill: Pour dressing over the salad and toss to coat. Chill in the fridge for 30 minutes before serving.

    Garnish & Enjoy: Sprinkle with extra cheese or cilantro for a final touch!
