For the cake: • 1 ½ cups all-purpose flour • 1 cup almond flour • 2 tsp baking powder • ½ tsp salt • ½ cup unsalted butter, softened • ½ cup sugar • ½ cup honey • 3 large eggs • ½ cup Greek yogurt (or sour cream) • 1 tsp vanilla extract • Zest of 1 lemon • 1 ½ cups fresh cherries, pitted and halved
For topping: • 2 tbsp sliced almonds • 2 tbsp honey (warmed, for drizzle)
Instructions: 1. Preheat oven to 350°F (175°C). Grease and line a round cake pan. 2. Mix flour, almond flour, baking powder, and salt. 3. Beat butter, sugar, and honey until creamy. Add eggs one by one, then yogurt, vanilla, and lemon zest. 4. Fold in dry ingredients gently. Spread batter in pan, pressing cherries on top. 5. Sprinkle sliced almonds, bake 40–45 min until golden and set. 6. Drizzle with honey before serving.
