Ingredients (1 loaf): • 2 ripe bananas, mashed • 1 cup dried figs, chopped • ½ cup walnuts, chopped • 2 cups all-purpose flour • 1 tsp baking soda • ½ tsp baking powder • ½ tsp cinnamon • Pinch of salt • ½ cup brown sugar • ½ cup olive oil (or melted butter) • 2 large eggs • ½ cup plain yogurt • 1 tsp vanilla extract
Instructions: 1. Preheat oven to 350°F (175°C). Grease and line a loaf pan. 2. Whisk together flour, baking soda, baking powder, cinnamon, and salt. 3. In another bowl, mix mashed bananas, sugar, oil, eggs, yogurt, and vanilla. 4. Fold in dry ingredients, then add figs and walnuts. 5. Pour batter into loaf pan, bake 50–60 min until golden and a toothpick comes out clean. 6. Cool slightly, slice thick, and enjoy warm.
