For the crust: • 1 ½ cups ground almonds • 3 tbsp cocoa powder • 3 tbsp sugar • 4 tbsp melted butter
For the filling: • 8 oz (225g) dark chocolate, chopped • ½ cup butter • ½ cup sugar • 3 large eggs • 2 tsp espresso powder • Pinch of salt • 1 tsp vanilla extract
For finishing: • A light dusting of cocoa powder • Rough chocolate shavings
Instructions: 1. Mix almonds, cocoa, sugar, and butter. Press into a springform pan. Bake 10 min at 350°F (175°C). 2. Melt chocolate and butter together. Stir in sugar, espresso, salt, and vanilla. 3. Beat in eggs one at a time until glossy. 4. Pour into crust, bake 20–25 min until just set (slightly fudgy in center). 5. Cool, then dust with cocoa and scatter chocolate shavings casually.
