🍗 Chicken Breasts with Apricot-Ginger Glaze & Toasted Almonds
Ingredients (Serves 4):
For the chicken: • 4 chicken breasts • 2 tbsp olive oil • Salt & black pepper
For the glaze: • ½ cup apricot preserves • 1 tbsp fresh ginger, grated • 1 tbsp soy sauce • 1 tbsp rice vinegar • 1 tsp honey • Pinch of chili flakes (optional)
For garnish: • ¼ cup toasted sliced almonds • Fresh cilantro or parsley
Instructions: 1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet and sear chicken until golden on both sides. 2. In a small pan, combine apricot preserves, ginger, soy sauce, rice vinegar, honey, and chili flakes. Simmer until glossy and slightly thickened. 3. Brush glaze generously over chicken, reduce heat, and cook until chicken is fully cooked and glaze caramelizes slightly. 4. Sprinkle with toasted almonds and fresh herbs before serving.
