Instructions: 1. Mix miso, soy sauce, mirin, rice vinegar, and sesame oil. Spread over cod fillets and marinate 20 min. 2. Place fish on a lined baking sheet, bake at 400°F (200°C) for 12–15 min until flaky and slightly caramelized on top. 3. Quickly sauté spinach with sesame oil and soy sauce until just wilted. Sprinkle with sesame seeds. 4. Serve cod over sesame spinach with extra glaze drizzled on top.
