🍳 Truffled Egg Clouds with Crispy Prosciutto & Chives
Ingredients (Serves 2): • 4 large eggs • 2 tbsp grated Parmesan cheese • 1 tsp truffle oil (or a few drops to taste) • 2 slices prosciutto • Fresh chives, finely chopped • Salt & black pepper
Instructions: 1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper. 2. Separate egg whites from yolks, keeping yolks whole. 3. Whip egg whites with a pinch of salt until stiff peaks form. Gently fold in Parmesan and truffle oil. 4. Spoon 4 fluffy mounds onto the tray, making a small well in the center of each. 5. Bake for 3 min, then gently add a yolk into each well. Bake 3–4 min more until yolks are glossy but whites golden. 6. Meanwhile, crisp prosciutto slices in a hot skillet until crunchy. Break into shards. 7. Sprinkle egg clouds with crispy prosciutto and chives. Serve immediately.
