Ingredients (Makes ~14 cookies): • ½ cup (115g) unsalted butter, softened • ½ cup (100g) brown sugar • ¼ cup (50g) granulated sugar • 1 large egg • 1 tsp vanilla extract • 1 ¼ cups (155g) all-purpose flour • ½ tsp baking soda • ¼ tsp cinnamon • ¼ tsp salt • ½ cup fresh peach chunks (small, juicy pieces, well-drained) • ¾ cup white chocolate chunks (rough, not uniform)
Instructions: 1. Cream butter and sugars until fluffy. Add egg and vanilla. 2. Mix in flour, baking soda, cinnamon, and salt until just combined. 3. Gently fold in peach chunks and white chocolate. Dough will be slightly sticky. 4. Scoop rustic mounds onto a baking tray lined with parchment. 5. Bake at 350°F (175°C) for 10–12 min until golden at edges but soft in the middle. Let cool slightly before serving.
