For the cake: • 1 cup all-purpose flour • ½ cup cocoa powder (unsweetened) • 1 tsp baking soda • ½ tsp baking powder • ½ tsp cinnamon • ¼ tsp cayenne pepper (optional, for heat) • Pinch of salt • ¾ cup brown sugar • ½ cup olive oil (good quality, fruity) • 2 large eggs • 1 tsp vanilla extract • 1 cup buttermilk
For finishing: • Rough dark chocolate chunks • A light sprinkle of flaky sea salt
Instructions: 1. Preheat oven to 350°F (175°C). Grease and line a loaf or round cake pan. 2. Mix flour, cocoa, baking soda, baking powder, spices, and salt. 3. In another bowl, whisk sugar, olive oil, eggs, and vanilla. Stir in buttermilk. 4. Fold wet and dry ingredients together gently. 5. Pour into pan, scatter dark chocolate chunks on top. Bake 35–40 min until set but moist. 6. Sprinkle lightly with flaky sea salt before serving.
