Ingredients (Serves 2): • 4 slices rustic country bread • 2 tbsp butter (softened) • 4 slices prosciutto • 1 ripe peach, thinly sliced • 4 oz (115g) brie cheese, sliced • 1 tbsp honey • A handful of arugula
Instructions: 1. Butter one side of each bread slice. 2. Layer prosciutto, peach slices, brie, and arugula between two slices of bread (buttered sides facing out). 3. Heat a skillet or grill pan and cook sandwich until bread is golden and crispy, and brie is melted. 4. Drizzle with honey before serving for a sweet-salty balance.
