FRITO PIE
Serves 6
INGREDIENTS
1 tablespoon olive oil
1 pound lean ground beef
1 cup yellow onion diced
2 large cloves garlic minced
2 tablespoons tomato paste
1 packet chili seasoning (or 3 tablespoons)
1 16 oz can chili beans in chili sauce undrained
1 15 oz can petite diced tomatoes undrained
1 15 oz can tomato sauce
1 4 oz can diced green chiles
Salt and pepper to taste
9.25 oz Fritos corn chips
1 ½ cups shredded cheddar jack cheese divided
Toppings of your choice
INSTRUCTIONS
1. Heat a large pot or Dutch oven over medium high heat.
2. Once hot, add oil, followed by ground beef. Break beef up briefly, then let it sit undisturbed for about 3 minutes to develop some color.
3. Continue cooking until beef is mostly cooked through but still some pink remaining, add onion, garlic, and tomato paste, cook an additional 5 minutes.
4. Add chili seasoning, chili beans, diced tomatoes, tomato sauce and green chiles.
5. Bring to a boil, reduce to simmer, and simmer uncovered until slightly reduced and thickened, about 25-30 minutes.
6. Taste chili and adjust seasoning with salt and pepper. Remove from heat and stir in half of the cheese. You can serve it a few different ways:
Baked:
1. Preheat oven to 375℉ while the chili cooks.
2. Spray a 13×9” baking dish lightly with non-stick cooking spray.
3. Pour in the bag of Fritos, top with 3 heaping cups of the chili using a slotted spoon, and add the remaining cheese.
4. Bake for 12-15 minutes, or until hot.
5. Serve immediately with toppings.
Stovetop only:
1. Pour Fritos onto a serving platter, or divide amongst bowls.
2. Top with the hot chili using a slotted spoon, and sprinkle on remaining cheese.
3. Serve immediately with toppings.
Walking Frito Pie:
1. Instead of a large bag of chips, purchase individual size bags, top with chili, cheese, toppings.
