BBQ Beef Bacon Cheeseburger Meatloaf

Ingredients:
For the Meatloaf:
1 lb ground beef
1/2 lb beef bacon, chopped
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup finely chopped bell pepper (red or green)
2 cloves garlic, minced
1 large egg
1/2 cup shredded cheddar cheese
1/2 cup BBQ sauce (plus extra for topping)
1 tbsp Worcestershire sauce
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
For the Topping:
1/4 cup shredded cheddar cheese
2–3 tbsp BBQ sauce

Instructions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

In a large skillet, cook the chopped beef bacon over medium heat until crispy. Remove from the skillet and drain on paper towels. Discard excess bacon fat, leaving about 1–2 tbsp in the skillet.

Add the chopped onion, bell pepper, and garlic to the skillet with the remaining bacon fat. Sauté until softened, about 3–4 minutes. Remove from heat and let cool slightly.

In a large bowl, combine the ground beef, cooked bacon, sautéed vegetables, breadcrumbs, egg, shredded cheddar cheese, 1/2 cup BBQ sauce, Worcestershire sauce, dried oregano, salt, and black pepper. Mix until well combined.

Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape into a loaf if using a baking sheet.

Bake for 35–40 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.

Remove the meatloaf from the oven and brush the top with additional BBQ sauce. Sprinkle with shredded cheddar cheese.

Return to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
Let the meatloaf rest for 10 minutes before slicing. Serve with extra BBQ sauce on the side, if desired.
