Ingredients:
* Cake: 1 1/2 cups all-purpose flour, 1 tsp baking soda, 1/2 tsp salt, 1 tsp cinnamon, 1/2 cup unsalted butter (softened), 1 cup brown sugar, 2 large eggs, 1 cup mashed ripe bananas (about 3 medium), 1/2 cup buttermilk.
* Pudding: 1 box (3.4 oz) instant vanilla pudding mix, 2 cups milk.
* Assembly: 3-4 ripe bananas (sliced), 1 box vanilla wafers.
Instructions:
* Prep: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round pans.
* Cake Batter: Whisk flour, baking soda, salt, and cinnamon. In a separate bowl, beat butter and sugar. Add eggs, then mashed bananas and buttermilk.
* Mix: Gradually add the dry ingredients to the banana mixture and mix until just combined.
* Bake: Pour into pans and bake for 25-30 minutes. Cool completely.
* Pudding: Prepare pudding according to package directions, then chill for at least 15 minutes.
* Assemble: Place one cake layer on a plate. Spread half the pudding over it, then top with a layer of vanilla wafers and sliced bananas. Place the second cake layer on top and repeat with the remaining pudding, wafers, and bananas. Chill for at least an hour before serving.
