No-Bake Cadbury Creme Egg Cheesecake with White Chocolate Filling and Biscuit Base

Serves: 12
Prep: 20 mins
Chill: 6 hours (overnight best)
INGREDIENTS
Base
• 250g plain sweet biscuits
• 120g butter, melted
Filling
• 300ml thickened cream
• 200g white chocolate
• 750g cream cheese
• ½ cup caster sugar
• 1 tsp vanilla extract
• 1 tbs gelatine (dissolved in ⅓ cup water)
• 6 Cadbury Creme Eggs
To decorate
• Extra Cadbury Creme Eggs
👩🍳 METHOD
Grease and line a 23cm springform tin.
Crush biscuits and mix with melted butter. Press firmly into the base and chill.
Whip the cream to soft peaks and set aside.
Melt the white chocolate and allow to cool slightly.
Beat the cream cheese, sugar and vanilla until smooth.
Mix in the dissolved gelatine.
Fold through the melted chocolate and whipped cream.
Spread half the filling over the base.
Place the whole Creme Eggs on top.
Spread the remaining filling over the eggs.
Chill for at least 6 hours (overnight is best).
Decorate with extra chopped Creme Eggs before serving.
(Try not to eat all the Creme Eggs while making it… very difficult.)
