Gnocchi, Lentil & Tomato Bake: A Cozy One-Pan Vegan Meal with Spinach and Basil
GNOCCHI, LENTIL & TOMATO BAKE ๐
This has to be one of my favourite one pan bakes, so cosy and full of healthy goodness and flavour - itโs definitely a 12/10 meal! ๐๐ฏ๐
Recipe- serves 4
Ingredients
1 large onion , finely diced
4 cloves garlic, crushed
200g cherry or baby plum tomatoes
1 tin chopped tomatoes
1/2 tspn chilli flakes
2 tspn maple syrup
2 tspn balsamic vinegar
300ml @marigoldhealthfoods bouillon vegetable stock
1 packet gnocchi (vg)
1 tin lentils, drained and rinsed
4 handfuls spinach, chopped
1/2 bunch basil chopped
Method
- add the onions to a deep bottomed pan with a little olive oil or spray oil, fry gently until softened
- Add the garlic and tomatoes and continue to cook until softened
- Add the tin of chopped tomatoes, together with the chilli flakes, maple syrup, balsamic vinegar, vegetable stock and lentils - give it a stir to combine
- Continue to cook for 5 minutes, folding the spinach in to the dish before checking the seasoning- add salt and black pepper to taste
- Stir through the gnocchi and put the pan in the oven for 25 minutes to bake
- Serve, garnished with some freshly torn basil (I didnโt have any this time around) and some crusty garlic bread.
