Easy Vegan Chilli with Avocado, Beans and Spices

I’m always batch cooking or making a big one pan dish and this chilli is always a very quick and easy recipe to make 👌💯😍
It’s packed full of protein and very versatile, serve it with rice, nachos, a jacket potato or loaded into wedges 🙌🤩
Recipe
Ingredients (serves 6+)
3-4 white onions, chopped
4 cloves garlic, crushed
1 packet vegan mince (I’ve used @tesco Plant Chef frozen soya mince)
2 tspn Berbere spice (add a little more of the chilli powder and paprika if you don’t have any Berbere spice)
2 tspn paprika
1 tspn chilli powder
1 tspn oregano
1 /2 tspn ground cumin
1/2 tspn cinnamon
3 can chopped tomatoes
1 tbspn tomato purée
1 can kidney beans, lightly drained
1 can black beans, lightly drained
1 red pepper, 1 green pepper, chopped
2 tbspn @marigoldhealthfoods nutritional yeast
Salt and black pepper to season
To garnish
1 avocado, halved and sliced
Fresh coriander
Red chilli flakes
Method
- gently fry the onions and garlic with a little olive oil or spray oil in a deep bottomed pan until softened
- add the mince and spices and cook for another 5-7 minutes
- add the tomato purée, tinned chopped tomatoes, kidney beans, black beans and chopped peppers and simmer on a low to medium heat for 20-30 minutes until the sauce reduces a little
- season with salt and black pepper, add the nutritional yeast and stir through
- serve alongside some steamed rice and/or nachos or sweet/jacket potato
- Garnish with the halved, sliced avocado, fresh coriander and red chilli flakes
- Enjoy ☺️
