Apple Sponge Pudding with Soft Stewed Apples and Vanilla Ice Cream

🍎 APPLE SPONGE PUDDING
Serves: 6
Prep: 20 mins
Bake: 30 mins
INGREDIENTS
For the apples
• 6 apples
• 50g caster sugar
• 2 tbs water
For the sponge
• 125g butter, softened
• ½ cup caster sugar
• 1 tsp vanilla extract
• 2 eggs
• 1 cup self-raising flour
• ¼ cup milk
👩🍳 METHOD
Preheat oven to 175°C fan-forced. Grease a baking dish.
Peel, core and chop the apples.
Place the apples, sugar and water into a saucepan and cook for 8–10 minutes until just soft.
Drain any extra liquid and spoon the apples into the baking dish.
Beat the butter and sugar until pale and creamy.
Add the vanilla and eggs and beat until combined.
Fold in the self-raising flour and milk until smooth.
Spoon the sponge mixture over the apples.
Bake for 30 minutes until golden and cooked through.
Serve warm with ice cream, cream or custard.
(Because warm apple pudding and cold ice cream is never a bad idea.)
