CREAMY HARISSA BUTTER BEANS & GNOCCHI 💚

This all in one pan dish is bursting with all my favourite flavours, packed full of gains and sooo easy to make- it’s a definite winner in our house 👌💯😍

Ingredients

250g baby plum or cherry tomatoes
2 jars @boldbeanco butter beans
1 carton silken tofu - @yutakaeats
4 roasted peppers from a jar
1 tspn @marigoldhealthfoods vegetable bouillon
1 tspn garlic granules
2 tspn harissa paste - @belazu_co
2 tbspn @marigoldhealthfoods nutritional yeast
150 ml boiling water
Salt and black pepper
1 packet gnocchi - @dececco_pasta

To garnish
Plant based yoghurt
Harissa/chilli oil
Red chilli flakes
Fresh parsley

Method
- heat a little olive oil or spray oil in a deep bottomed pan and sauté the tomatoes for a few minutes
- Empty the 2 jars of butter beans into the pan
- Meanwhile add the silken tofu, peppers, harissa paste, nutritional yeast, bouillon powder, garlic granules, salt and salt and water to a blender and blend until smooth
- Pour the sauce into the pan, stir through and add the gnocchi. Cook on a medium heat for 15-20 minutes until the gnocchi is tender
- Take off the heat and garnish with plant based yoghurt, harissa or chilli oil Red, chilli flakes and fresh parsley
- Serve with toasted sourdough or some steamed broccoli
- Enjoy ☺️
