🥥 GLUTEN-FREE ALMOND & COCONUT CAKE

Serves: 12
Prep: 10 mins
Bake: 50 mins

INGREDIENTS
200g unsalted butter
4 eggs (room temp)
1 tsp vanilla extract
180g almond meal
70g desiccated coconut
¼ tsp salt
275g caster sugar
30g flaked almonds
Icing sugar, to dust (optional)

👩‍🍳 METHOD
Preheat oven to 180°C fan-forced. Line a 20cm round tin.
Melt the butter in a large bowl. Let it cool slightly.
Add eggs and vanilla. Beat until combined.
Stir in almond meal, coconut, salt and sugar.
Pour into tin.
Sprinkle flaked almonds on top.
Bake 50 mins or until the centre springs back when pressed.
Cool in the tin. Dust with icing sugar before serving.
