INGREDIENTS
Shortbread Layers
200g butter, softened
110g (½ cup) caster sugar
2 tsp vanilla extract
300g (2 cups) plain flour
1 tsp baking powder
Caramel Filling
2 tbs golden syrup
395g sweetened condensed milk
100g butter
Pinch sea salt
👩🍳 METHOD
Preheat oven to 160°C fan-forced. Line a 20cm square tin.
Cream butter + sugar until pale and fluffy. Beat in vanilla.
Add flour + baking powder. Mix until combined (it’ll look crumbly).
Press ⅔ of the mixture into the base. Smooth and prick with a fork.
Bake 10 minutes until lightly golden.
Place golden syrup, condensed milk, butter and salt in a saucepan over LOW heat.
Stir continuously for 10–15 minutes until thickened. (Keep heat low!)
Pour caramel over base.
Sprinkle remaining shortbread mixture on top.
Bake 15–20 minutes until golden.
Cool completely, then refrigerate before slicing.
