Easy Homemade Sausage Rolls Recipe with Veggies and Puff Pastry

The sausage rolls that are on repeat in our house 🥐😅

I made my go-to sausage rolls again and SO many of you messaged saying you’d made them this week too!
So here’s the full recipe so you can save it, screenshot it, or make them next weekend.

They’re easy, freezer-friendly, and always disappear fast.

🥐 HOMEMADE SAUSAGE ROLLS

INGREDIENTS
1 medium carrot, grated
1 medium zucchini, grated
1 brown onion, finely chopped
500g sausage mince
500g pork mince
1 tsp minced garlic (optional)
1½ tbsp tomato sauce
¼ cup Worcestershire sauce
6 sheets puff pastry, defrosted
1 egg, lightly beaten
Sesame or poppy seeds (optional)



👩‍🍳 CONVENTIONAL METHOD
1. Grate the carrot and zucchini and squeeze out all the moisture.
2. Add veggies, onion, mince, garlic and sauces to a bowl. Mix well.
3. Cut one sheet of pastry in half.
4. Place 1/12 of the mixture in a long line down the middle.
5. Roll up (seam side down), brush with egg and sprinkle with seeds.
6. Place on lined trays and chill in the fridge for 1 hour (important!).
7. Cut into 4 pieces.
8. Bake at 180°C fan-forced for 30–35 minutes until golden.



⚡ THERMOMIX METHOD
1. Place carrot, zucchini and onion into bowl. Grate 5 sec / Speed 9.
2. Squeeze out all moisture and return to bowl.
3. Add mince, garlic, sauces and mix Reverse / Speed 5 / 30 sec.
4. Roll, egg wash, chill, cut and bake as above.



⭐ TIPS
Don’t skip the chill — crispy pastry every time
Squeeze veggies well to avoid soggy bases
Freeze cooked or uncooked
Can bake from frozen (add 10 minutes)
