🍰 3 INGREDIENT FRUIT CAKE

Serves: 16
Prep: 5 mins (+ overnight soak)
Bake: approx. 1 hour

INGREDIENTS
1kg (6 cups) dried mixed fruit
600ml (2½ cups) iced coffee (or juice, tea etc)
300g (2 cups) self-raising flour

👩‍🍳 METHOD
Place the dried fruit into a large bowl.
Pour over the iced coffee and mix well.
Cover and refrigerate overnight to soak.
Preheat oven to 160°C fan-forced. Line a 23cm cake tin.
Stir the self-raising flour through the soaked fruit mixture.
Spoon into the prepared tin and smooth the top.
Bake for approximately 1 hour (ovens vary) until the centre feels firm and a skewer comes out with a few moist crumbs.
Cool completely before slicing.

⭐ TIPS
• Soaking overnight is essential — don’t skip it.
• If browning too quickly, loosely cover with foil.
• Delicious served plain, warmed with custard, or with a little cream.
