Creamy Oven Baked Chicken & Rice with Bacon
🍗🥓 CREAMY OVEN BAKED CHICKEN & RICE
This is my “everyone’s tired, I can’t deal, but dinner still needs to happen” recipe.
You throw it in the oven.
You do NOT stir it.
You do NOT peek.
Two hours later? Creamy, bacon-y, tender chicken magic.

🥓 CREAMY CHICKEN & RICE BAKE
Serves: 6
Prep: 10 mins
Cook: 2 hours
INGREDIENTS
420g can cream of chicken condensed soup
1 cup water
½ tsp garlic powder
1 tsp dried oregano
1 tsp dried parsley
200g streaky bacon
1 cup uncooked long grain white rice (rinsed)
4–6 chicken thighs (approx. 500g)
Salt & pepper
½ tsp sweet paprika
½ tsp cajun seasoning

👩🍳 METHOD
Preheat oven to 150°C fan-forced. Grease a casserole dish.
Whisk together soup, water, garlic powder, oregano and parsley.
Lay bacon across the base of the dish.
Sprinkle over uncooked rice.
Place chicken thighs on top. Season with salt, pepper, paprika and cajun.
Pour creamy mixture over the top. Do not stir.
Cover tightly with two layers of foil (seal it well).
Bake for 2 hours. Do not open the oven.
Check rice in the centre is cooked. If needed, reseal and cook a little longer.
Scoop deep to get bacon + rice + chicken in every serve.

⭐ TIPS
• Use streaky bacon (it melts through the whole dish).
• Must use uncooked long grain rice.
• Seal tightly — the steam cooks the rice.
• Leftovers are AMAZING the next day.
• Freezes beautifully up to 3 months.
