π FRENCH ONION CHICKEN BAKE

Cook: 50 mins
INGREDIENTS
45g French onion soup mix
3 tbs plain flour
1kg chicken thighs, halved
30g (2 tbs) butter
2 tbs olive oil
300g shortcut bacon, diced
1 onion, diced
1 tsp dried thyme
1 tsp minced garlic
1 tbs extra plain flour
500ml (2 cups) chicken stock
1 tsp dijon mustard
125g (Β½ cup) sour cream
Fresh parsley, to serve
π©βπ³ METHOD
Preheat oven to 180Β°C fan-forced.
Mix soup mix + flour. Coat chicken and shake off excess.
Heat butter + oil in a large oven-safe casserole dish.
Brown chicken (2 mins each side). Remove.
Cook bacon, onion, thyme and garlic 3β4 mins.
Sprinkle over extra flour. Stir 1 minute.
Gradually add stock while stirring.
Stir through dijon.
Return chicken to pan. Cover.
Bake 20 minutes.
Uncover and bake another 30 minutes until cooked through.
Stir through sour cream. Sprinkle parsley and serve.
