Creamy peppermint filling.
Chunks of Mint Slice through the middle.
Chocolate biscuit base.

💚 NO-BAKE MINT SLICE PEPPERMINT CHEESECAKE
Serves: 16
Prep: 20 mins
Chill: 4 hours (overnight is best)
INGREDIENTS
Base
250g Arnott’s Choc Ripple biscuits
100g Arnott’s Mint Slice biscuits
125g butter, melted
Filling
240g (1 cup) thickened cream
200g white chocolate
2 tsp gelatine (dissolved in ¼ cup boiling water, cooled)
500g full-fat cream cheese, softened
150g (¾ cup) caster sugar
1–2 drops green food colouring
½ tsp peppermint essence
100g Mint Slice biscuits, broken into chunks
To decorate
Grated dark chocolate
Extra Mint Slice biscuits

👩🍳 METHOD
Line a 23cm springform tin.
Crush the Choc Ripple + Mint Slice biscuits. Mix with melted butter.
Press firmly into the base. Chill.
Whip cream. Set aside.
Melt white chocolate. Cool slightly.
Dissolve gelatine.
Beat cream cheese, sugar, foodcolouring and peppermint until smooth.
Beat in gelatine + melted white chocolate.
Fold through whipped cream + broken Mint Slice biscuits.
Spoon over base and smooth top.
Chill minimum 4 hours (overnight is best).
Decorate before serving.
