Lemon & Coconut Slice Recipe with Marie Biscuits, Condensed Milk and Butter Frosting

๐ LEMON & COCONUT SLICE
Serves: 20
Prep: 15 mins
Chill: 4 hours (overnight is best)
INGREDIENTS
Base
80g butter
250g sweetened condensed milk
250g plain sweet biscuits (Marie or similar)
90g (1 cup) desiccated coconut
Zest + juice of 1 lemon
Frosting
360g (3 cups) pure icing sugar (sifted)
90g butter, softened
75ml (5 tbs) lemon juice
20g (3 tbs) desiccated coconut
๐ฉโ๐ณ METHOD
Line an 18cm x 28cm slice tin.
Crush biscuits into fine crumbs.
Stir through coconut and lemon zest.
Add melted butter, condensed milk and lemon juice. Mix well.
Press firmly into the tin. Chill.
Whisk icing sugar, softened butter and lemon juice until smooth and creamy.
Spread over slice. Sprinkle with coconut.
Chill until firm.
Slice and try not to eat three pieces while โcutting samples.โ
