Oven Baked Thai Chicken Meatballs with Sweet Chilli Sauce and Sesame Seeds

OVEN BAKED THAI CHICKEN MEATBALLS šŸ‡¹šŸ‡­šŸ”šŸ”„

Okay these are the meatballs you make when you want dinner to feel a bit fancy… but you also cannot be bothered.

They’re sweet, a tiny bit tangy, super kid-friendly, and you don’t even have to stand at the stove. Oven does the work. Love that for us.

INGREDIENTS
• 500g chicken mince
• ½ cup (45g) panko crumbs (or breadcrumbs)
• 1 tsp minced garlic
• 1 tsp minced ginger
• 2 tbsp soy sauce
• 2 tbsp sweet chilli sauce
• 1 tbsp lime juice
• 2 tbsp extra sweet chilli sauce (for brushing)
• Sesame seeds (optional)

For the sauce:
• ā…“ cup sweet chilli sauce
• 1½ tbsp lime juice

METHOD
Preheat oven to 210°C fan. Lightly spray a mini muffin tray (or baking tray).
In a bowl, mix chicken mince, crumbs, garlic, ginger, soy, sweet chilli sauce and lime juice (don’t overmix).
With wet hands, roll into heaped tablespoon balls. Place into the tray.
Bake for 15 minutes.
Brush with the extra sweet chilli sauce and sprinkle with sesame seeds. Bake 2 more minutes (until cooked through).
Mix sauce ingredients in a small bowl for dipping.
Serve with rice + veggies, or just stand at the bench ā€œtestingā€ them. šŸ˜…
