Creamy Beef Mince Pasta with Cheddar Cheese, Garlic and Italian Herbs
CREAMY BEEF MINCE PASTA 🍝🧀✨
This is my “everyone’s tired, but we still need to eat” dinner.
Creamy. Cheesy. Proper comfort food.
And it’s on the table in 35 minutes without wrecking the budget.
Toddlers eat it. Big kids eat it. Adults go back for seconds. Win.
INGREDIENTS
• 225g pasta (spirals, penne or shells)
• 1 tbsp olive oil
• 500g beef mince
• 1 brown onion, diced
• 2 tsp minced garlic
• 2 tsp dried Italian herbs
• 1 tsp ground paprika
• 2 tbsp plain flour
• 2 cups beef stock
• 500g tomato pasta sauce (like Napoletana)
• ¾ cup cream
• 1½ cups grated cheddar cheese
• Salt and pepper
METHOD
Cook the pasta in salted boiling water until almost al dente. Drain and set aside.
Heat olive oil in a large pan. Brown the beef mince for 4–5 minutes. Remove and set aside.
In the same pan, cook the onion for 2–3 minutes until softened. Stir in the garlic, herbs and paprika.
Sprinkle over the flour and stir for 1 minute.
Slowly pour in the beef stock while stirring. Add the pasta sauce and simmer for about 8 minutes until thickened.
Add the cooked pasta, beef mince and cream. Stir and cook for 2 minutes.
Stir in the cheese until melted. Season with salt and pepper. Serve straight away.
It will look saucy at first — don’t panic. It thickens as it sits.
