Recipe:
Ingredients:
- 1 cup rice, rinsed and drained
- 1 1/2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 ripe avocado, cut into cubes
- 1 cucumber, cut into small dices
- Sesame seeds, for garnish
- Chopped spring onions, for garnish
- For the Japanese-style chilli drizzle:
- 2 tablespoons soy sauce
- 1 tablespoon sriracha or a similar red chilli sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon grated ginger
- 1 clove garlic, minced

Method:
1. Cook sushi rice with water according to package instructions. Once cooked, season with rice vinegar, sugar, and salt, then spread out to cool.
2. In a bowl, gently fold the avocado and cucumber dices into the cooled rice.
3. Using wet hands, shape the rice mixture into small, compact discs or sushi-style pieces.
4. Arrange the rice pieces on a serving plate.
5. Prepare the chilli drizzle by combining soy sauce, sriracha or red chilli sauce, sesame oil, ginger, and garlic. Stir well until the sauce turns a vibrant red hue.
6. Spoon or drizzle the sauce over the rice pieces just before serving. Garnish with sesame seeds and spring onions.
