Recipe:
Ingredients:
- 400g firm tofu, pressed and cubed
- 2 cups jasmine or basmati rice, rinsed and cooked according to package instructions
- 2 tbsp sesame oil
- 1 red chili, finely chopped
- 3 spring onions, thinly sliced
- Sesame seeds, for garnish
For the Sauce:
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp maple syrup
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1/2 cup water
Method:
1. Start by cooking the rice as this can simmer while you prepare the tofu. Bring the rice to a boil, then reduce to a low simmer, cover, and cook until fluffy.
2. Press the tofu to remove excess moisture for a crispier result. Cube the tofu into bite-sized pieces.
3. Heat sesame oil in a pan over medium heat. Add tofu cubes and fry until all sides are golden and crispy. Remove from the pan and set aside.
4. In the same pan, add a little more sesame oil if needed, and sauté the chili and white parts of the spring onions until fragrant.
5. Whisk together all the sauce ingredients in a bowl until well combined. Pour this into the pan with the chili and spring onions, bringing it to a simmer until it thickens slightly.
6. Toss the crispy tofu back into the pan, coating evenly with the spicy sauce.
7. Serve the sticky tofu over the cooked rice, garnished with the green parts of the spring onions and a sprinkle of sesame seeds.
