Recipe:

Ingredients:
- 1 pack of vegan gnocchi (about 500g)
- 1 can of diced tomatoes (400g)
- 1 cup of vegan cream (almond or soy-based)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/2 cup roasted cherry tomatoes
- 1/4 cup fresh basil leaves, torn
- 1/2 cup sun-dried tomatoes, chopped
- 1 red bell pepper, diced
- 4 strips of vegan bacon, cooked and chopped
- Salt and pepper to taste
- Vegan parmesan (optional, for garnish)

Method:
1. In a skillet, heat olive oil over medium heat.
2. Add minced garlic, diced red pepper, and chopped sun-dried tomatoes. Sauté until softened.
3. Incorporate the diced and roasted cherry tomatoes into the skillet, allowing them to simmer for 5 minutes.
4. Meanwhile, cook the vegan bacon according to package instructions, then chop.
5. Add the vegan bacon to the skillet and stir.
6. As the mixture simmers, prepare the vegan gnocchi as per the package instructions.
7. Pour in the vegan cream to the skillet, blending until a creamy sauce forms. Season with salt and pepper.
8. Add the drained gnocchi to the creamy tomato sauce, ensuring even coating.
9. Serve hot, garnished with torn basil leaves and a dash of vegan parmesan, if desired.
