Happy world vegan day everyone! 💚 In celebration I have Whipped up these succulent vegan dumplings for dinner tonight. The spicy sesame drizzle is everything!

Recipe:

1. Vegan Dumplings:
Ingredients:
- 200g firm tofu, crumbled
- 1 carrot, finely grated
- 50g shiitake mushrooms, finely chopped
- 2 spring onions, finely sliced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Vegan dumpling wrappers (available at Asian grocery stores)

Method:
1. In a mixing bowl, combine crumbled tofu, carrot, shiitake mushrooms, spring onions, garlic, and ginger.
2. Add in the soy sauce and sesame oil, and mix well until the filling is thoroughly combined.
3. Lay out a dumpling wrapper, place a spoonful of the filling in the centre, wet the edges with a little water, fold, and press to seal. Repeat until all the filling is used.
4. Steam the dumplings for 15 minutes until they are translucent and the filling is heated through.

2. Spicy Sesame Drizzle:
Ingredients:
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp agave syrup or maple syrup
- 1 tsp chilli flakes (adjust to preference)
- 1 tsp fresh ginger, grated
- Toasted sesame seeds, for garnish
- Sliced green onions, for garnish

Method:
1. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, syrup, chilli flakes, and ginger until well combined.
2. Drizzle over steamed dumplings, and garnish with sesame seeds and green onions.
